Chickpea salad with roasted red pepper dressing

INGREDIENTS
1/4 cup of chickpeas (rinsed & drained)
1/3 cup of sliced Persian cucumbers
1/3 cup of sliced cherry tomatoes
2 tbsp of diced red onion
2 tbsp green olives
1 tbsp dairy-free feta
Organic spinach

Dressing:
1 heaping tbsp of roasted red pepper hummus
1/2 tbsp lemon juice
1/2 tbsp water 1 tsp dried oregano
Pinch of salt & pep
This serves one but can be doubled, tripled, etc for however much you need!

DIRECTIONS
In a large bowl, add the base of spinach (I roughly chop before) & all the rest of your ingredients listed above. In a small bowl, add the dressing ingredients & stir. Add more hummus/less liquid if you want it thicker & vice versa for thinner. Pour over your salad, add salt & pepper to everything, and enjoy!
