SWEET POTATO & RED LENTIL STEW

Serves 4
๐ŸŒฑ 1 onion, diced
๐ŸŒฑ 2 cloves garlic, finely grated or minced
๐ŸŒฑ 250g dried red lentils
๐ŸŒฑ 1 medium sweet potato, cut into bite sized chunks
๐ŸŒฑ200g frozen peas
๐ŸŒฑ 2 tsp ground cumin
๐ŸŒฑ 1 tsp ground coriander
๐ŸŒฑ 1 & 1/2 tsp smoked paprika
๐ŸŒฑ a pinch dried chilli flakes
๐ŸŒฑ 1 tbsp tomato pureฬe
๐ŸŒฑ 400g can coconut milk
๐ŸŒฑ 400g can chopped tomatoes
๐ŸŒฑ 1 veg stock cube
๐ŸŒฑ 400ml water
๐ŸŒฑ salt & pepper

1. Steam or boil your sweet potato for 15 mins until soft enough to poke a fork through without breaking apart. Set aside

2. Sauteฬ the onion and garlic in a large saucepan with a lil oil (or water for oil free) on a medium heat for 5-8 mins until soft.

3. Stir in all the spices cook for 1 min until fragrant before stirring in the tomato pureฬe.

4. Pour in the chopped tomatoes & coconut milk, then stir in the sweet potato, peas & lentils.

5. Add your veg stock then gradually add in your water.

6. Bring to a boil on a high heat setting, once it starts to bubble, turn it down and simmer for 25 mins until the lentils are soft and the liquid has reduced. Season with salt and pepper.

7. I served mine with roasted broccoli here and sprinkled with nutritional yeast, and I also like it with rice or quinoa! ๐Ÿ˜‹
