SWEET POTATO & RED LENTIL STEW

Serves 4
🌱 1 onion, diced
🌱 2 cloves garlic, finely grated or minced
🌱 250g dried red lentils
🌱 1 medium sweet potato, cut into bite sized chunks
🌱200g frozen peas
🌱 2 tsp ground cumin
🌱 1 tsp ground coriander
🌱 1 & 1/2 tsp smoked paprika
🌱 a pinch dried chilli flakes
🌱 1 tbsp tomato purée
🌱 400g can coconut milk
🌱 400g can chopped tomatoes
🌱 1 veg stock cube
🌱 400ml water
🌱 salt & pepper

1. Steam or boil your sweet potato for 15 mins until soft enough to poke a fork through without breaking apart. Set aside

2. Sauté the onion and garlic in a large saucepan with a lil oil (or water for oil free) on a medium heat for 5-8 mins until soft.

3. Stir in all the spices cook for 1 min until fragrant before stirring in the tomato purée.

4. Pour in the chopped tomatoes & coconut milk, then stir in the sweet potato, peas & lentils.

5. Add your veg stock then gradually add in your water.

6. Bring to a boil on a high heat setting, once it starts to bubble, turn it down and simmer for 25 mins until the lentils are soft and the liquid has reduced. Season with salt and pepper.

7. I served mine with roasted broccoli here and sprinkled with nutritional yeast, and I also like it with rice or quinoa! 😋
