BLUEBERRY PROTEIN MUFFINS 💚
You can’t beat a batch of warm blueberry muffins straight from the oven
They’re so moist, crammed with jammy blueberries and have added protein powder for those extra gains (completely optional) 💯👌😍x

Ingredients
- 200g plain flour
- 150g caster sugar
- 50g @myvegan vanilla or salted caramel soy isolate (if you don’t want to add protein powder, just add another 50g of plain flour)
- 1/2 tspn salt
- 3tspn baking powder
- 240ml soy milk
- 1 tspn apple cider vinegar
- 80g vegan yogurt
- 60ml sunflower oil
- 2 tspn vanilla extract
- 180g blueberries (fresh or frozen)
Method
- heat the oven to 220*
- Line a muffin tin with 12 muffin cases
- Sieve the flour into a mixing bow
- Add all the other dry ingredients and stir to combine
- Add the apple cider vinegar to the milk and whisk until it thickens and goes slightly lumpy
- Add the milk mixture and remaining wet ingredients to the dry ingredients and stir to combine (don’t over mix)
- Fold through 2 thirds of the blueberries (be careful if using frozen blueberries as you don’t want to discolour the cake mix)
- Divide the mixture between the muffin cases
- Add the remaining blueberries to the top of the muffins
- Bake in the oven for 20 mins until a cake skewer comes out clean when testing the muffins
- Leave to cool on a wire rack
