SPICY 🌶 PEANUT BUTTER TOFU!!

Serves 4
1/2 pack firm/extra firm tofu, pressed of liquid and cut into small cubes
1/2 small onion, chopped
4 cloves garlic, minced
sauce:
1/4 cup natural peanut butter
1/2 cup canned coconut milk
1/2 cup water, more to thin as needed
3 tbsp tamari (gluten free soy sauce)
2 1//2 tsp harissa or chili garlic sauce
2 T agave
1/2 t salt
1/2 cup cilantro, chopped
1/2 lemon, juiced
4 handfuls spinach
1/2 cup frozen peas
1 cup rice, white or brown
HOW TO MAKE
Prepare rice as instructed on packaging.
Heat a skillet on medium heat and saute onion and garlic until fragrant. Add tofu and saute until tofu begins to brown/crisp (about 5-10 minutes). While tofu is cooking mix your sauce ingredients together until combined. Pour sauce into the pan with tofu and simmer on low until it begins to thicken. Adding more water if needed to thin out.
Add spinach and toss until wilted. Add cilantro, peas, and lemon juice. Adjust flavor to your liking, adding more salt, or chili garlic sauce for spice.
Serve with rice and more cilantro!
