Makes 4 servings:
6 med size sweet potatoes
1/2 cup plant based whipping cream (I used @silk brand)
4 tbsp of vegan butter
1 tsp cinnamon powder
1/2 tsp nutmeg
Salt
Garnish: 2 tbsp of coconut whip, pomegranates, pecans, pepitas, sage
Method:
Peel the sweet potatoes, cut in quarters and cook until they are soft. Using a masher, mash the potatoes with whipping cream and butter then use a whisk to fluff them up even more, add the spices and salt. Garnish the potatoes with coconut whip, pomegranates, pecans, pepitas and sage leaves. Enjoyed hot or cold. #thanksgiving #sidedish #sweetpotato #veganrecipes #vegan #plantbased
