These peanut tofu bowls are the perfect easy vegetarian dinner!
Pack with all the goods + a DELICIOUS peanut sauce, these wholesome flavour filled bowls are sure to be a new favourite meal of yours 😍
Ingredients:
Firm tofu
Lettuce
Tomato
Grated carrot
Edamame beans
Rice - I usually just use leftovers or microwaveable packets for convenience)
Shallots
Fresh herbs
Peanut sauce (this serves 2)
1/4c natural peanut butter
2tbsp soy sauce
1 1/2tbsp honey
1tbsp minced garlic
1tsp lemon juice
*if it’s too thick you can add splash of water
For the tofu you can pan fry it plain or sometimes I cook it with some honey and soy sauce. You could also use chicken if you don’t like tofu!
