KALE AND TROPICAL FRUIT SALAD WITH PAN FRIED TOFU AND CITRUS VINAIGRETTE

Tropical salad anyone? Happy Wednesday!✨

IN MY BOWL 👉🏻 A base of olive oil massaged kale topped with red and yellow dragon fruit, blackberries, avocado, jalapeno, pan fried tofu, toasted macadamia nuts, purple basil, cilantro and scallions drizzled with a citrus dressing.

❇️ FOR THE TOFU 👉🏻 Chop ½ a block of tofu into cubes and pat dry. Heat up 1 tbsp avocado oil in a skillet and once hot add the tofu cubes and cook until golden on all sides. Sprinkle with sea salt and chipotle (or seasonings of choice) and enjoy!

❇️ FOR THE CITRUS VINAIGRETTE ⤵️
🔹3 tbsp olive oil
🔹1 tbsp white wine vinegar
🔹1 tbsp fresh orange juice
🔹1 tsp orange zest
🔹½ tsp agave or maple syrup
🔹½ tsp sea salt
👉🏻 Combine all the ingredients together in a jar and shake until seamlessly combined. Enjoy!
