Vegan Spicy Lemongrass Noodle Soup

Looking for a quick and healthy dinner idea that’s ready in 10 minutes? Try this easy and delicious noodle soup that is absolutely addictive and it’s my favourite go to bowl of comfort.
Recipe as below:
Prep time: 5 minutes
Cook time: 5 minutes
(2 servings)
Recipe:
1 package noodles, cook according to the package direction
2 tbsp lemongrass paste
2 cloves garlic, chopped
1 shallots, chopped
1 tsp ginger powder
700 ml vegetable broth or water
1 fresh chilli, thinly sliced
1 small carrot, thinly sliced or any your favourite vegetable
2 tbsp soy sauce
1 tbsp mirin
1/2 tsp white pepper
1 tbsp vegetarian oysters sauce
2 tsp sesame oil
Salt for seasoning
2 tbsp chilli oil
For toppings
200g Pan fried tofu
Sliced carrot
Handful coriander
Toasted black sesame seeds
Method:
1). Heat chilli oil in a saucepan, sauté garlic and shallots till fragrant.
2.) Add in the lemongrass paste, fresh chilli and ginger powder, sauté another 1 minutes.
3.) Then pour the vegetable broth and simmer for 5 minutes with low heat.
4). Add in the soy sauce, mirin, white pepper,oyster sauce,sesame oil and salt.
5). Place the cooked noodle in a serving bowl, pour the lemongrass soup and serve with all the toppings and enjoy.
