Tangy Mango and Carrot Pickle Delight

    Sweet and sour, carrot and mango pickle by _Rashida habib @my_recipes_of_yesterday

    2&1/4 cup brown vinegar
    1&1/2 cup sugar
    1/2 cup corn flour or maziena
    Boil till thick and transparent...stir continuously

    Peel mangoes and carrots, slice thinly. Add tsp of turmeric spread on a clean cloth and leave overnight, next day add the carrots

    To this add ...salt to taste
    5 tblsp chilly powder
    2 tblsp whole jeera
    1&14 tblsp crushed dhania seeds..dry roast few seconds
    3&1/4 tblsp methi masala (pickle masala)
    Mix well..Add the sugar syrup and mix till well coated.

    Heat 1&1/2 cup oil and add..
    Few whole green chillies..slit
    Few whole garlic
    2 tblsp mustard whole mustard seeds
    Curry leaves
    Add all this to the above n mix well.
    Cover and leave overnight...mix next day and bottle. Keeps well in the fridge n freezer

    #1 & 1/2 kg mangoes
    #1/2 kg carrots
    adjust spices accordingly if quantity is more
