Spicy Lamb Karai with Aromatic Herbs

    Ingredients:
    • 1kg lamb cut into medium pieces washed well and drained
    • 2 tbsp clarified butter
    • 1/2 laddle of oil
    • 2 onions cut in to small pieces
    • 3 medium fresh tomatoes chopped in a chopper
    • 1 tsp whole cumin
    • 3 clove buds
    • 3 peppercorns
    • 2 cinnamon sticks
    • 3 cardamon pods
    • 1 & 1/2 tsp salt
    • 1 tbsp youghurt
    • 1 tsp turmeric powder
    • 2 tsp Kashmiri chilli powder
    • 2 tsp paprika powder
    • 3 sliced green chillis
    • 2 tsp coriander powder
    • 1 tsp cumin powder
    • 2 bulbs of fresh garlic minced
    • 2 large chunks of ginger minced
    • 1 tsp dried kasturi methi
    Garnishing:
    • 1 tsp garam masala
    • Chopped Fresh corriander
    • 1 chunk of ginger cut in to thin match sticks
    • Optional to add red and green chillis
    Method:
    Take a large karai, braise onion in clarified butter and oil, with sliced green chillis, whole cumin, cardamom pods, clove buds, peppercorns, & cinnamon sticks. As the onions starts to brown, add the washed lamb, followed with minced fresh garlic and ginger. Mix well let it cook on medium heat for half an hour.
    Now add the fresh chopped tomatoes, yogurt, salt and turmeric powder. Again let this braise for 15 minutes on medium heat.
    Lastly add the Kashmiri chilli powder, paprika powder, corriander powder, cumin powder & kasturi methi. Mix well whilst its braising add 1 mug of hot kettle water. Put the meat on slow heat and let it cook for approximately 30 minutes.
    At this stage the gravy of the meat should be slightly thick and the meat nice and tender.
    Switch the heat of sprinkle garam masala, some chopped coriander and some fresh ginger sticks.
    Serve the karai gosh with naan bread, parathas or fresh hot rotis.
