Sweet Potato Delight with Goat Cheese and Pomegranate

    Ingredients:

    2 large sweet potatoes, peeled and sliced into ½-inch thick rounds

    1 tablespoon olive oil

    Salt and pepper, to taste

    6 oz goat cheese, softened

    ½ cup pomegranate seeds

    1 tablespoon honey (optional, for drizzling)

    Fresh thyme leaves, for garnish (optional)

    Directions:

    Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet and roast for 20–25 minutes, flipping halfway through, until tender and lightly golden.

    Remove from oven and let cool slightly. Spread a small amount of goat cheese on each round.

    Top with pomegranate seeds, a light drizzle of honey (if using), and fresh thyme. Serve warm or at room temperature.
