Spiced Mushroom Ramen

Ingredients
6 cups of water
1 onion
2 cups of mixed dried mushrooms
2 bay leaves
2 star anis seeds
4 cloves
2 garlic cloves, smashed
2 dehydrated chili peppers
3 inch piece of fresh ginger
2 tbs of soy sauce
Noodles of choice
Method
1. In a pot over medium heat, bring your water to a boil.
2. Optional: Meanwhile, in a cheese cloth, seal your spices,, peppers and garlic together.
3. Add your mixed dried mushrooms, sealed bag with spices, onion, ginger and soy sauce.
4. Cook for about 45 minutes.
5. If the broth evaporates below 4 cups of water, add water as needed.
6. Add your cooked noodles of choice
7. Garnish with your favorites! We used tofu and roasted corn!
8. Enjoy!
