PEANUT TOFU ZOODLES 🥜🍝🌱by @hungry_naschkaz
After all the hearty food, I really wanted a light and fresh meal. The Zoodles are more than perfect for that. Not only do they taste great, they also have a lot of protein and healthy fats. They are also low-carb. So, let's go!
📝Ingredients (2 servings):
• 2 zucchinis (approx. 500g)
• 300g - 400g natural tofu
• 1 spring onion
• 40 g peanut butter
• 1.5 tbsp lemon juice
• 3 tbsp soy sauce
• 6 tablespoons water (more or less depending on the desired consistency)
• Chili powder/flakes
• about 1/2 clove of garlic
• Sesame seeds for sprinkling
👩🏻🍳Here's how:
Wash the zucchinis and either cut them into noodles with a spiral cutter or, if you don't have one, simply use a vegetable peeler to cut the zucchini into fine slices/strips - just like you would peel the zucchini.
Drain the tofu and cut into cubes. Heat some oil in the pan and fry the tofu until crispy.
Meanwhile, for the sauce, press the garlic and then mix the peanut butter, lemon juice, soy sauce, chili powder/flakes, water and garlic into a creamy sauce. The amount of water required can vary here. Simply add the water a tablespoon at a time until you reach the desired consistency.
Chop the spring onion finely.
Arrange the zoodles on plates and top with tofu, peanut sauce, spring onions and sesame seeds. Bon appetit!
