(Smoky. Sweet. Charred at the edges — and unapologetically messy.)
This isn’t your backyard BBQ — it’s deeper, darker, and more intense. These meat chunks (pork or beef) are seared golden, then coated in a bold homemade BBQ glaze with smoky notes, spice, and sweetness. Sauce drips, meat pulls apart — this is what real flavor looks like.
⸻
📝 Ingredients (serves 2–3): • 400–500g pork shoulder or beef chuck, cut into chunks • Salt & pepper • 1 tbsp oil for searing
BBQ glaze: • ½ cup ketchup • 2 tbsp apple cider vinegar • 2 tbsp brown sugar • 1 tbsp soy sauce • 1 tsp smoked paprika • ½ tsp garlic powder • 1 tsp Dijon mustard • Optional: pinch of chili flakes
⸻
🔥 Instructions: 1. Sear the meat: Season chunks generously with salt and pepper. Sear in a hot pan with oil until golden on all sides. Remove and let rest. 2. Make the BBQ glaze: Combine all sauce ingredients in a small saucepan. Simmer for 8–10 minutes until thick and glossy. 3. Glaze & finish: Toss meat chunks in the warm glaze until fully coated. Return to pan or oven (optional) to caramelize slightly. 4. Serve it messy: Spoon onto a plate. Let the sauce drip. Let the meat sit imperfect. No need for sides or cleanup — just flavor.
