Here’s a classic Shrimp Scampi Pasta recipe that’s easy to make and full of garlicky, buttery goodness!
Ingredients: 8 oz spaghetti (or linguine) 1 lb shrimp, peeled and deveined 3 tbsp unsalted butter 2 tbsp olive oil 4 cloves garlic, minced 1 tsp red pepper flakes (optional) 1/2 cup dry white wine (or chicken broth) Juice of 1 lemon 1/4 cup fresh parsley, chopped 1/2 cup grated Parmesan (optional) Salt and black pepper, to taste
Instructions: Cook Pasta: Boil the pasta in salted water until al dente. Reserve ½ cup pasta water, then drain and set aside.
Sauté Shrimp: Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium-high heat. Add shrimp, season with salt and pepper, and cook for 2 minutes per side until pink and opaque. Remove and set aside.
Make the Sauce: In the same pan, add 1 tbsp olive oil and remaining butter. Sauté garlic and red pepper flakes for about 1 minute until fragrant.
Deglaze with Wine: Pour in the white wine, scraping up any bits from the pan. Let it simmer for 2 minutes to reduce slightly.
Combine Everything: Stir in lemon juice, and shrimp. Add cooked pasta and toss everything together, add reserved pasta water a little at a time to loosen the sauce. Add Parmesan and toss all together.
Finish & Serve: Remove from heat, mix in parsley, and top with more Parmesan if desired. Serve immediately!
