Someone asked for an apple version of the butter swim biscuits so I made Apple Pie Butter Swim Biscuits, topped with a Caramel glazed, & sprinkled with powdered sugar. I used Apple Pie dessert wine instead of water for the filling. And it was a 12/10!!! 🍎🥧
Dough: 2.5 cups flour 1/4 cup sugar 1 tbs baking powder 1 tsp salt, if using unsalted butter 2 cups buttermilk 1 tsp vanilla extract, optional 1/2 cup butter
Apple pie filling: 3 medium apples 1 tsp lemon juice, fresh squeezed 3/4 cup brown sugar 1 tsp vanilla extract 1/2 tsp cinnamon Dash of nutmeg 1/4 cup Oliver apple pie wine or water 1 tbs cornstarch
Toppings: Caramel Powdered sugar
💓Peel apples & cut into bite size pieces. Add to a pan. Squeeze lemon juice and add brown sugar, cinnamon, nutmeg, vanilla extract, & wine. Cover & simmer for 10 min. Mix cornstarch with equal parts water & add to apple pie mixture. Cover & simmer for another 10 min. 💓Preheat oven to 400. Add butter to a 9x9 baking pan & place in oven until butter melts & browns. Set aside. 💓For the dough, add dry ingredients to a large bowl & whisk. Add wet ingredients & mix to combine. Don’t over-mix your dough. Add apple pie filling, reserving some for the top. Gently fold in. Add dough to prepared baking dish. Spread dough out evenly & add remaining apples to the top. Press firmly into dough, cut into 9 squares, & bake for 30 min. 💓Warm caramel in the microwave until it’s warm to your liking. Spread evenly over your biscuits. Dust with powdered sugar. Enjoy!
