Tempted by Tempeh?
I absolutely love a bowl of colourful food and this tempeh and noodle stirfry is A-MAZING! 👌😍
Ingredients -serves 2
1 block @tofoo tempeh, sliced into round discs
2 tbspn soy sauce
1 tbspn rice wine vinegar
2 tspn sesame oil
2 tspn Garlic granules
2 tspn Ground ginger
Red pepper
Red onion
Carrots
Green beans
Broccoli
Protein Noodles
Method
* Make a marinade by mixing the soy, rice wine vinegar, sesame oil, garlic granules and ginger
* Add the tempeh slice to the mixture and leave to marinate while you prepare the rest of the veg and noodles
* Stir fry the tempeh in a little oil or spray oil (taking out of the marinade and setting the mixture aside)
* Take the tempeh from the pan and leave to the side on a plate
* Stir fry the vegetables in a little oil or spray oil until just cooked
* Add the rest of the marinade and fry for another couple of minutes
* Add the precooked noodles and stir through to reheat
* Serve the stir fried vegetables and noodles with the tempeh
* Garnish with spring onions and sesame seeds
* Enjoy
