White Bean Salad

Spring time is my favourite time of year and with it comes my favourite meals. Lighter salads with just a handful of ingredients but with lots of flavour!

Ingredients (serves 1):
3tbsp white beans
3 slices of halloumi (60g)
1 small courgette, sliced
1.5tbsp extra virgin olive oil
Pinch of salt
1/2 tsp dried mint
1/2tsp dried oregano
1/2 tsp garlic powder
5 cherry tomatoes, halved
2tbsp chopped parsley
Citrus vinegar or white wine vinegar

In a mixing bowl, add the mint, oregano, salt, garlic powder and oil. Add the sliced halloumi and courgette, mix well then leave to marinade for 20 minutes. Meanwhile, mix the beans with the parsley and tomatoes.
Heat a griddle pan and cook the halloumi and courgette until charred on each side. Mix with the beans and add a touch of vinegar or lemon juice to cut through the richness of the cheese. Enjoy!
