Here’s the recipe for my charred tofu with hummus, asparagus and blistered tomatoes ❤️

For the tofu;
2 tbsp soy/tamari sauce
1 tbsp maple syrup
1 tbsp smoked paprika
1/2 tsp garlic granules
1/2 tsp. Dijon mustard
1 tbsp oil
Pinch sea salt & black pepper
300g firm tofu, pressed and sliced
1 bunch asparagus
A little oil of choice
For the blistered tomatoes;
1 tbsp olive oil
200g cherry tomatoes
1 tsp smoked paprika
1 tsp garlic granules
1 tbsp olive oil
To serve;
Creamy hummus/whipped tahini/garlic yogurt
Fresh herbs
To make the tofu;
Add the dressing ingredients to a tub and mix to combine
Add the tofu and coat with the dressing
Add a little oil to a pre-heated griddle or frying pan
Allow to cook on each side for a few minutes until crispy and a little charred.
To make the charred asparagus;
Add the asparagus to a griddle with a little oil.
Cook, turning occasionally, until charred and cooked through.
To make the tomatoes;
Add the oil to a large frying pan, heat to medium.
Add the spices and olive oil to a bowl and mix, chop the cherry tomatoes in half then add them to the bowl and mix well.
Place the cherry tomatoes bottom side down on the olive oil
Fry for 2-3 minutes on low to medium, then turn over and fry for a further minute.
Remove from the pan and set aside.
