Ingredients: • 4 tablespoons (60 g) pumpkin puree • 2 tablespoons (25 g) sugar (adjust to taste) • 1 teaspoon pumpkin pie spice (or mix of cinnamon, nutmeg, ginger, cloves) • 1 teaspoon vanilla extract (5 ml) • 2 cups (480 ml) milk • ½ cup (120 ml) brewed coffee or 2 shots espresso (about 60 ml) • Whipped cream, for topping (~60 g) • Extra pumpkin pie spice, for dusting
Instructions: 1. In a small saucepan, combine pumpkin puree, sugar, pumpkin pie spice, and vanilla. Stir well. 2. Add the milk and whisk while heating over medium heat until hot and frothy (do not boil). 3. Brew coffee (or espresso) and divide between 2 mugs. 4. Pour the hot pumpkin-spiced milk mixture over the coffee, stir to combine. 5. Top each mug with whipped cream and a sprinkle of pumpkin pie spice.
