Recipe

Ingredients:
- 400g firm tofu, pressed and cubed
- 500g fresh spinach, washed and chopped
- 2 medium onions, finely chopped
- 3 garlic cloves, minced
- 1 inch ginger, grated
- 2 medium tomatoes, diced
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala
- 1/2 tsp chilli powder
- 2 tbsp vegetable oil
- Salt to taste
- Fresh coriander leaves, for garnish
- 1 green chilli, finely chopped, for garnish

Method:
1. Start by heating one tablespoon of oil in a pan. Add the cumin seeds and let them sizzle for a few seconds. Then add the onions and sauté until they turn translucent.
2. Add the garlic and ginger to the onions, and fry until aromatic. Stir in the coriander, turmeric, garam masala, and chilli powder, cooking for a minute until the spices release their fragrances.
3. Mix in the chopped tomatoes and cook until they break down into a sauce.
4. Gradually add the spinach to the pan, allowing it to wilt and mix well with the spice base. Cook for about 10 minutes, or until the spinach is completely wilted and the mixture thickens. If desired, use a hand blender to partially puree the spinach for a smoother texture.
5. In a separate pan, heat the remaining tablespoon of oil over medium heat. Add the tofu cubes and fry until all sides are golden brown and crispy. Then, incorporate the tofu into the spinach mixture.
6. Simmer the combined saag and tofu for another 10 minutes, allowing the flavours to meld. Season with salt to your taste.
7. Serve hot, garnished with fresh coriander leaves and chopped green chilli. Accompany with warm roti or naan bread if desired.
