For the French Toast
1 loaf of challah or brioche bread, sliced thickly
4 large eggs
1 cup milk or almond milk
1/2 cup pumpkin puree
1/4 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
Butter for cooking
For the Homemade Pumpkin Syrup
1 cup maple syrup
1/4 cup pumpkin puree
1/2 teaspoon pumpkin pie spice
1/4 teaspoon cinnamon
1/2 teaspoon vanilla extract
Pinch of salt
Directions:
In a large bowl, whisk together the eggs, milk, pumpkin puree, brown sugar, vanilla extract, pumpkin pie spice, and cinnamon until smooth.
Heat a skillet or griddle over medium heat and melt a small amount of butter. Dip each slice of bread into the batter, making sure both sides are coated.
Place the dipped bread onto the skillet and cook for 3 to 4 minutes on each side, or until golden brown and cooked through. Add butter to the skillet as needed.
While the French toast is cooking, prepare the syrup. In a small saucepan over medium heat, combine the maple syrup, pumpkin puree, pumpkin pie spice, cinnamon, vanilla extract, and salt. Stir until smooth and heated through. Remove from heat.
Serve the French toast warm with a generous drizzle of pumpkin syrup. Add whipped cream or a dusting of powdered sugar if desired.
