Brioche rolls:
Go to “highlights” in my profile, then select “baking” for the recipe for brioche buns.
Mayonnaise:
1 whole egg 2 deciliter of canola oil The juice from one lime 1 teaspoonful of white wine vinegar 1 teaspoonful of mustard Salt and pepper to taste
Blend with a stick blender in a cylindrical glass starting with the yolks.
Fried chicken:
Butterfly chicken breasts, season liberally with a poultry rub, then bread in a mixture of flour, eggs and panko and deepfry in plenty of canola oil at approximately 160-180 degrees celcius. When they are golden brown and measure 70 degrees celcius internally remove them from the oil.
Red onions:
Add equal parts of vinegar and sugar to a pot and bring to a boil. Finely slice a red onion. Add the slices to the vinegar and boil for one minute. set aside.
Bacon: fry the bacon on a cold pan set over medium heat till crisp and golden. Set aside on a piece of kitchen towel.
