COCONUTTY CHICKEN RED THAI CURRY 🇹🇭

Can’t go wrong with a quick and easy red Thai curry. Few veggies - baby corn, peppers, onion, beansprout in a Coconutty, red Thai sauce

To make the red Thai paste -
100 g Shallots
1 tablespoon garlic paste or 2 garlic cloves
10 g jarred ginger pieces or 10g piece of fresh ginger
2 large red chillies
1 stalk lemongrass
5 kaffir lime leaves
1 teaspoon ground coriander
1 teaspoon ground turmeric
½ tablespoon olive oil
1 teaspoon fish sauce
1 or 2 tablespoon of water if needed for blending

I made this paste and then chilled it off overnight then cooked the chicken in it then added the veggies of choice then add a can of coconut milk. Spot on!
