BAKED FETA PASTA π
Guyssss how has it been nearly 4 years since we were all obsessed with banana bread and feta pasta in lockdown all because of tik tok? π€£π€£
Ingredients
500 g cherry tomatoes
2 garlic cloves, crushed
2 1/2 tbsp. extra virgin olive oil
200 g feta
300 g penne pasta
25 g fresh basil, leaves picked and roughly chopped
Step 1
Preheat oven to 220Β°C (200Β°C fan) mark 7. Toss the cherry tomatoes, garlic, 2tbsp olive oil and some seasoning in a medium, deep roasting tin (the tomatoes should just fit in a single layer). Place the feta in the centre and drizzle over the remaining 1β2tbsp oil. Cook for 35min.
Step 2
When your sauce has 15min left, bring a large pan of salted water to the boil and cook the pasta according to pack instructions. Drain, reserving 150ml of the pasta cooking water.
Step 3
Remove the roasting tin from the oven and stir in most of the basil, until the tomatoes and feta break up and you have a chunky sauce. Stir in the hot pasta and the reserved pasta water. Check seasoning, garnish with remaining basil and serve.
