Recipe:
Ingredients:
- 1 kg potato gnocchi (vegan)
- For the pesto:
- 2 cups fresh basil leaves
- 1/2 cup pine nuts, toasted
- 2 garlic cloves
- 3/4 cup extra virgin olive oil
- 1/4 cup nutritional yeast
- Salt and pepper, to taste
- To garnish:
- 1 red chilli, thinly sliced
- A sprinkle of red pepper flakes
- Fresh basil leaves, chopped
Method:
1. Prepare the green pesto by blending the basil leaves, pine nuts, garlic, and nutritional yeast in a food processor until coarsely ground. While blending, slowly pour in the olive oil until the mixture emulsifies into a smooth sauce. Season with salt and pepper to taste.
2. Bring a large pot of salted water to a boil. Cook the gnocchi according to the package instructions until they float to the surface, indicating they are cooked. Drain the gnocchi and set aside.
3. In a large pan over medium heat, add the cooked gnocchi and pour over the green pesto. Gently toss to coat all the gnocchi evenly, heating through for 2-3 minutes.
4. Serve the pesto gnocchi in a large serving dish, garnished with sliced red chilli, red pepper flakes, and a scattering of chopped fresh basil for an extra burst of flavour.
