Ingredients:
1tsp Very Lazy Chopped Ginger
1tsp Very Lazy Chopped Garlic
1tbsp Very Lazy Smokey Chilli Boost
Noodles
Peanut butter
Miso paste
Sesame oil
Vegetable stock
Soy sauce
200ml coconut milk
Pak choi
Fresh coriander
Sweetcorn
Spring onion
Sesame seeds
Method:
1. Gently fry 1tsp of Very Lazy Chopped Ginger, and 1tsp of Very Lazy Chopped Garlic in some olive oil.
2. Mix together 1-2tbsp of peanut butter and 1tbsp of miso paste.
3. Add the paste to the pan and slowly mix with a little hot water until a loose consistency, then add coconut milk and some extra hot water, so you have enough ramen stock for your servings and to cook the noodles in.
4. Add vegetable stock, then season to taste with an optional extra dash of sesame oil and soy sauce.
5. Add the noodles and pak choi and cook for 3 to 5 minutes, or until ready.
6. Mix in 1tbsp of Very Lazy Smokey Chilli Boost and add in the garnishes. Tuck in! 🥢
