CHILLI BOWL 💚
Tonight’s dinner is a tasty chilli bowl, packed with gains 💪💪
If you’ve seen my recent posts, you’ll know that I’ve been aiming to increase my protein, and I’ve definitely noticed a difference from it 🙌🤩
Getting back to the bowl; it’s some of the chilli that I batch cooked the other day, with a colourful salad and @myvegan sweet chilli crisps (another 11g protein)
The big batch of chilli makes 4 large portions, but it would probably be 6 or so for me 👌🥰
Chilli
2 red onions (250g) diced
6 garlic cloves, crushed
1 packet Tesco soya mince
2 tspn cumin
2 tspn paprika
1 tspn chilli powder
1 tspn oregano
1 tspn cinnamon
2 tins chopped tomatoes
1 tin black beans (and the liquid)
1 tin kidney beans, drained - no need to rinse
2 tbspn tomato purée
3 peppers (400g), chopped
Method
- add the onions to a deep bottomed pan with a little oil (I use spray oil) and fry gently until softened
- Add the garlic and continue to fry for 2-3 minutes
- Add the soya mince, stirring through and cooking for a few minutes until defrosted
- Add the spices, stirring through and cooking for another couple of minutes
- Add the chopped tomatoes, both tins of beans and tomato purée, stirring to combine
- Add the chopped peppers, stir and put the lid on, simmering for 20-30 minutes ( the longer you cook it over a gentle heat, the richer the sauce and flavours)
- Leave to cool before decanting into containers and chill completely if you’re going to freeze them
Tip - add a tspn of cocoa powder or square of dark chocolate for extra deliciousness 😍
