A fully loaded pancake platter for breakfast…and yes, they were all for me. High volume, high protein, dairy, gluten, grain, refined sugar FREE and honestly one of my favourite recipes of all time. You can top them with anything you fancy and split them into two breakfasts if you’re so included.
2 eggs
100g egg whites
50g banana
1-2tbsp coconut flour (coconut flour is high in protein, gluten & grain free but very drying, the more you add the denser and fluffier your pancakes will be, which I like)
1/2 tsp baking powder
Pinch of cinnamon
Pinch of vanilla bean extract
Blend in blender, cook in a pancake pan with coconut oil, top with toppings then ENJOY 🍴
