CRISPY SESAME BEEF:
This is easily in my top 3 beef stir fry’s. It’s crispy nutty, sweet, savoury, bursting with umami and oh so easy to make 👌
SERVES 2: Difficulty ☀️
⏲️ PREP: 15 Minutes.
📌 Add approx 200-250g thinly sliced steak of choice to a bowl. Add 1/4 tsp bicarbonate of soda, 1 tsp cornflour, 1 tsp oyster sauce, 1 tsp Chinese cooking wine, 1/2 tsp sesame oil, 1/2 tbsp water and mix well. Make sure all the meat is thoroughly covered with the marinade. Marinate for minimum 15 minutes or up to an hour.
📌 Make your sauce: In a bowl add 3 tbsp brown sugar, 1 tbsp oyster sauce, 2 tbsp light soy sauce, 2 tsp sesame oil, 1 tsp rice vinegar and 150ml hot water. Mix well.
📌 Mince 2 cloves of garlic and finely slice 1 spring onion.
📌 In a shallow dish mix 4 tbsp cornflour with 2 tbsp sesame seeds.
📌 In a small bowl mix 2 tsp cornflour with 1 tbsp water.
⏲️ COOK: 10 Minutes.
🥢 Dredge the beef (1) in the cornflour & sesame seeds (2) make sure it’s well coated and shake off any excess.
🥢 Heat a wok with 4 tbsp oil and once hot add the beef (you may need to do this in batches). Cook for 1 minute without moving it around and turn the pieces over and repeat. Remove to a plate lined with kitchen paper. Drain the oil leaving about 1 tbsp in the wok.
🥢 Heat the remaining oil and add the garlic (3) and stir fry for 30 seconds. Add the sauce (4) and bring to a simmer. Gradually add the cornflour mixture (5) and keep stirring until the sauce starts to reduce and thicken. Add the beef back in and coat it thoroughly with the sauce.
🥢 Serve over steamed rice garnish with the spring onions (6) and enjoy 😉
