cucumber salads have gone viral in recent years… but I recently made THIS CUCUMBER, AVOCADO SALAD 🥑🥒🥗 with pickled red onions.. and it’s perhaps my favorite cucumber salad, ever! it’s almost inspired by a Mexican agua chile or ceviche- but it champions small, Persian cucumbers, pickled red onions for tangy goodness, and creamy avocado slices to make it more satisfying. Ingredients (serves 4)
2 large avocados or 3 small ones, peeled, cored and sliced
1 large English cucumber sliced or 4 small Persian cucumbers
2-3 Tbsp pickled red onions
1 Tbsp extra virgin olive or avocado oil
2 Tbsp fresh lime juice
1 teaspoon harissa spice blend
1 teaspoon sumac
1/4 cup fresh dill or mint
sea salt and pepper to taste
Instructions
Place the avocados, cucumbers, onions and dill in a large bowl. Next, whisk together the simple vinaigrette: olive oil, lime juice, sea salt, pepper. Add the harissa and sumac, garnish with fresh dill or mint.
