Anzac Slice: Chewy, buttery oat and coconut slice with chocolate chips
ANZAC SLICE 🍯🥥
All the flavours of a classic ANZAC biscuit… in an easy slice!
Chewy, buttery and packed with oats and coconut, this quick lunchbox treat takes just 10 minutes to prep.
YOU'LL NEED:
• 1 cup rolled oats
• 1 cup plain flour
• ⅔ cup brown sugar
• ⅔ cup desiccated coconut
• 125g butter
• 2 tbsp golden syrup
• 2 tbsp water
• ½ tsp bicarbonate of soda
• 1 cup chocolate chips (optional)
METHOD
Preheat oven to 160°C fan. Line a slice tin with baking paper.
Place the butter, golden syrup and water into a microwave-safe bowl and heat until the butter has melted.
Stir through the bicarbonate of soda.
Add the oats, flour, brown sugar and coconut and mix until combined.
(Optional) Allow the mixture to cool slightly, then stir through the chocolate chips.
Press the mixture firmly into the prepared tin.
Bake for about 25 minutes or until lightly golden.
Cool completely before slicing.
