Fluffy Cottage Cheese Cloud Bread
Ingredients
4 large eggs, separated
1 cup cottage cheese (full-fat or low-fat)
¼ tsp baking powder
¼ tsp salt
Instructions
Preheat Oven
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone mat.
Separate the Eggs
Place egg whites in one bowl and yolks in another.
Whip the Egg Whites
Add baking powder to the egg whites and beat with a hand mixer on high until stiff peaks form (like meringue).
Blend the Yolks & Cottage Cheese
In a blender or food processor, blend egg yolks, cottage cheese, and salt until smooth.
Fold It All Together
Gently fold the whipped egg whites into the cottage cheese mixture, a little at a time, until just combined. Don’t overmix — keep it airy!
Scoop & Shape
Spoon the batter onto your prepared baking sheet in rounds (about ¼–½ cup each), leaving space between them.
Bake Until Golden & Puffy
Bake for 25–30 minutes, or until golden brown and set. Let cool slightly — they’ll deflate a bit, that’s normal!
