Fluffy Idli Delight with Spicy Sambhar and Coconut Chutney
Soft Idli Recipe
Ingredients:
1 cup urad dal (split black gram)
2 cups idli rice or parboiled rice
½ tsp fenugreek seeds (methi)
Salt to taste
Water (as needed)
Oil (for greasing)
Method:
1. Soak: Soak urad dal and methi together for 4–5 hours. Soak rice separately for 4–5 hours.
2. Grind: First grind urad dal with little water till fluffy. Then grind rice into a slightly coarse paste.
3. Mix: Combine both batters, add salt, and mix well. Let it ferment overnight or 8–10 hours.
4. Steam: Pour batter into greased idli molds and steam for 10–12 minutes.
5. Serve hot with sambhar and coconut chutney.
🍲 Sambhar Recipe (South Indian Style)
Ingredients:
1 cup toor dal (split pigeon peas)
1 tbsp tamarind pulp
1 onion, chopped
1 tomato, chopped
1 carrot, chopped
1 drumstick (optional)
2 tbsp sambhar masala
¼ tsp turmeric powder
1 tsp mustard seeds
A few curry leaves
2 dried red chilies
2 tbsp oil or ghee
Salt to taste
Fresh coriander (for garnish)
Method:
1. Cook dal: Pressure cook toor dal with turmeric and 2 cups water until soft. Mash well.
2. Boil veggies: In a pan, boil the vegetables with tamarind pulp, salt, and sambhar masala until soft.
3. Combine: Add the mashed dal to the boiled vegetables and simmer for 10 minutes.
4. Temper: In a small pan, heat oil, add mustard seeds, curry leaves, and red chilies. Let splutter and pour over sambhar.
5. Garnish with fresh coriander and serve hot with idli.
