Easy Peri-Peri Chicken Rice Salad in a Bag with Edamame and Veggies
Okay but WHY did no one tell me that the hot chicken bag hack was actually THIS good?! 😮🔥
Threw this together for lunch yesterday and the leftovers were just as good today. Zero bowls. Minimal effort. Maximum flavour. Busy-mum WIN.
If you’ve got a supermarket hot chicken, you need to try this 👇
WHAT YOU NEED:
• 1 rotisserie barbecue chicken (keep the bag and the juices in it!)
• 1 packet pre-cooked rice (I used jasmine)
• 1 cucumber, chopped or sliced
• 1–2 carrots, grated or sliced
• 1 cup edamame
• ½ cup spring onions, thinly sliced
• ¼ cup Kewpie mayo (or whole egg mayo)
• ¼ cup plain Greek yoghurt
• 1 tbsp peri-peri rub
• ¼ cup sweet chilli sauce
• ½ tbsp soy sauce
HOW TO MAKE IT:
1️⃣ Take all the chicken off the bones, chop or shred it, and pop it straight back into the bag with all those delicious juices.
2️⃣ Heat the rice in the microwave and add that to the bag.
3️⃣ Add the cucumber, carrots, edamame, spring onions, mayo, yoghurt, peri-peri rub, sweet chilli sauce and soy sauce.
4️⃣ Seal the bag and shake it really well until everything is coated (you might need a spoon at the end to help things along).
5️⃣ Serve… or portion it up for easy lunches because this makes HEAPS.
So fresh, so flavour-packed, and totally customisable — swap sauces, change the veg, make it your own. But honestly? This combo is 👌
