Zesty Avocado and Tomato Medley Delight
🥑 Avocado Salad
Ingredients
1 English cucumber (or Persian/pole cucumbers, peeled if skin is thick)
2 cups grape tomatoes (multi-color blend or cherry tomatoes)
1/2 small red onion, thinly sliced (rinse if you want milder flavor)
2 ripe avocados, diced
2 Tbsp lemon juice (or lime juice)
1 Tbsp red wine vinegar (or white wine vinegar/apple cider vinegar)
3 Tbsp extra virgin olive oil
1/2 tsp honey
1 garlic clove, minced
2 Tbsp fresh cilantro, chopped
2 Tbsp fresh parsley, chopped
1/2 tsp dried oregano
Salt & pepper to taste
Instructions
Make the dressing: In a small bowl whisk together lemon juice, vinegar, olive oil, honey, garlic, cilantro, parsley, oregano, salt, and pepper.
Assemble the salad: In a large bowl, add cucumber, tomatoes, red onion, and avocado.
Toss gently with the dressing until everything is evenly coated.
Serve fresh and enjoy! 🌿

All the flavors of a bacon, lettuce, tomato & avocado sandwich — without the heavy bread! Even carb lovers will enjoy this hearty, flavorful salad.
Ingredients
½ cup plain fat-free Greek yogurt
¼ cup mayonnaise (full fat for richer flavor)
2 tsp fresh lemon juice
2 tbsp thinly sliced green onions
1 tbsp minced parsley
Salt & freshly ground black pepper, to taste
3 cups diced cooked, chilled chicken breast
6 slices bacon, cooked & chopped
1 ½ cups grape tomatoes, halved
½ cup diced celery (optional, adds crunch)
1 medium avocado (firm but ripe), diced
Romaine lettuce leaves, for serving
Instructions
In a medium bowl, whisk together yogurt, mayo, lemon juice, green onions, parsley, salt & pepper.
In a large bowl, combine chicken, bacon, tomatoes, and celery. (Set a little aside if you’d like to sprinkle on top later.)
Pour dressing over chicken mixture and toss to coat.
Gently fold in avocado.
Serve on crisp romaine lettuce leaves — or use bread if you prefer.
