Yellow Cake Muffins
Ingredients:
1 ½ cups all-purpose flour
1 cup sugar
½ cup unsalted butter, softened
2 large eggs, room temperature
½ cup whole milk
1 ½ teaspoons baking powder
½ teaspoon salt
1 teaspoon vanilla extract
Instructions:
Preheat your oven to 350°F (175°C).
Cream together the softened butter and sugar until the mixture is light and fluffy.
Beat in the eggs one at a time, making sure to mix well after each addition.
Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt.
Add the dry ingredients to the wet mixture, alternating with the milk. Mix until everything is just combined. Be careful not to overmix.
Divide the batter evenly into a lined muffin tin.
Bake for 18–20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
