Creamy Chicken & Cheese Sandwich
Ingredients
For Filling:
1 cup chicken (boiled & shredded or leftover roasted chicken)
3 tbsp mayonnaise
2 tbsp cream cheese (or thick cream)
½ cup mozzarella (grated)
½ cup cheddar (grated)
2 tbsp onion (finely chopped)
2 tbsp capsicum (finely chopped)
1 tsp black pepper (crushed)
½ tsp chili flakes (optional)
Salt to taste
For Sandwich:
4 slices sandwich bread (white or brown)
Butter for toasting

Method
1. Prepare Creamy Filling:
In a bowl, mix shredded chicken, mayo, cream cheese, onion, capsicum, pepper, chili flakes, and salt.
Add mozzarella + cheddar, mix well until creamy.
2. Assemble Sandwich:
Spread filling generously between two bread slices.
Butter outer sides of bread.
3. Toast Sandwich:
Heat a pan or sandwich maker.
Toast until golden and cheese melts inside.
4. Serve
