Strawberry Crunch Cheesecake Bites
Ingredients:
For the Crust:
• 1 cup (100g) crushed Golden Oreos
• 3 tablespoons unsalted butter, melted
For the Cheesecake Filling:
• 16 oz (450g) cream cheese, softened
• 1/2 cup (100g) granulated sugar
• 1 large egg
• 1 teaspoon vanilla extract
• 1/4 cup (60ml) sour cream
• 1/4 cup (60ml) strawberry preserves or sauce
For the Strawberry Crunch Topping:
• 6 Golden Oreos
• 2 tablespoons freeze-dried strawberries
• 1 tablespoon butter, melted
Directions:
1. Preheat Oven: Preheat to 325°F (160°C). Line a mini muffin tin with 24 paper liners.
2. Make the Crust: Combine crushed Golden Oreos and melted butter. Press a small amount into each liner to form a base.
3. Make the Filling: Beat cream cheese and sugar until smooth. Add egg, vanilla, and sour cream, mixing until creamy.
4. Add Strawberry Swirl: Spoon cheesecake mixture over each crust. Add a small dollop of strawberry preserves and swirl gently with a toothpick.
5. Bake: Bake for 15–18 minutes, until centers are just set. Let cool completely, then refrigerate at least 2 hours.
6. Make Crunch Topping: In a food processor, pulse Oreos and freeze-dried strawberries until crumbly. Mix with melted butter.
7. Top & Serve: Before serving, sprinkle crunch topping over each cheesecake bite. Enjoy chilled!
