Preheat oven to 375°F (190°C). On a lined baking sheet, toss strawberries with balsamic vinegar and honey. Roast for 15–20 minutes until soft and syrupy.
Meanwhile, in a food processor, blend feta, Greek yogurt, and olive oil until smooth and creamy. Spread the whipped feta onto a serving plate or shallow bowl.
Spoon the warm roasted strawberries and their juices over the whipped feta. Garnish with thyme leaves and a crack of black pepper.
Serve immediately with toasted bread or crackers.
