Toffee Apple Porridge

Serves 2
�For the porridge:
100g porridge oats
2 tbsp ground flax seeds
700ml non dairy milk
For the apple topping:
2 large apples, cored, peeled and sliced
2 tsp coconut oil
2 tbsp maple syrup
Sprinkle of oatmeal spice
Method
1️⃣ Put all the porridge ingredients in a pan and simmer for 5-6 minutes until cooked (add a bit more milk if it thickens too much)
2️⃣ For the apple topping, heat up the coconut oil in a frying pan, gently fry the apple for a couple of minutes until slightly soft and charred. Add the maple syrup until it’s bubbling and sticky and serve on top with a sprinkle of oatmeal spice and some pecans.
