Vegan Banana Oat Pancakes
Recipe:
Ingredients:
2 ripe bananas, mashed
2 cups rolled oats (gluten-free if necessary)
1 1/2 cups plant-based milk (such as almond or oat milk)
1 tablespoon baking powder
1/2 teaspoon cinnamon (optional)
1 teaspoon vanilla extract
Pinch of salt
Cooking spray or oil, for the pan
Instructions:
In a blender, combine the rolled oats, plant-based milk, baking powder, cinnamon, vanilla extract, and salt. Blend until smooth.
Add the mashed bananas to the blender and pulse a few times to incorporate them into the batter.
Heat a non-stick pan over medium heat and lightly grease it with cooking spray or oil.
Pour about 1/4 cup of batter for each pancake onto the hot pan. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Flip the pancakes and cook for an additional 2-3 minutes on the other side, or until golden brown.
Serve the pancakes warm with your favorite toppings, such as fresh fruit, nuts, or a drizzle of maple syrup.
