Happy Weekend! This Coconut + Lime Layer Cake is one you NEED to try + I've included the recipe below! 🌱🥥👀

It's one truly for coconut lovers and fully plant-based with the softest sponge with a creamy zingy twist! 🤌

🌟 The coconut lime sponges are slathered in a coconut cream frosting and topped with my coconut truffles (from a few posts back!)

Here's the recipe 👇

🌟 Ingredients for the sponges (for two 8 inch tins)

🌱2 ½ cups self-raising flour
🌱3 Tbsp cornflour
🌱¾ cup unsweetened desiccated coconut
🌱1 ½ tsp baking soda
🌱3/4 cup caster sugar
🌱½ cup melted coconut oil
🌱1 can evaporated coconut milk (360ml)
🌱2 tsp white wine or cider vinegar
🌱 juice of 1 lime
🌱 zest of 2 limes

🌟 Ingredients for the frosting
🥥 300g vegan cream cheese
🥥 3/4 tin Coconut whipping cream
🥥 1/2 cup dessicated coconut
🥥 1/3 cup caster sugar (more or less to taste)

🌟To make the sponges
🌱Preheat oven to 180°C. Grease two 8 inch round cake tins

🌱Place all the dry ingredients and zest in a large bowl and stir with a whisk until well combined.

🌱Add the melted coconut oil, coconut milk, vinegar, lime juice and mix until combined but be careful not to over-beat as it won't be as fluffy

🌱Divide the batter evenly between the tins + bake for 25 mins until a skewer inserted into the centre comes out clean

🌱leave to cool in the tins for at least 25 mins before removing from the tin

🌟For the frosting
First whisk together the vegan cream cheese with the sugar and dessicated coconut
Then slowly pour in the whipping cream until forms peaks and well combined

When the cakes have cooled, layer them up with the cream frosting in between and slathered on top! You can sprinkle extra dessicated coconut to decorate and some limes!
