Garlic Pattypan Squash + Beet Pasta 💛

1 lb. of your favourite pasta
Olive oil
Vegetable broth
1 small head of garlic
3-4 pattypan squash
1 large beet or 2 small
Fresh parsley
Sea salt
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Wash and peel your beet. Cut it into large chunks. Add to a pot of water and cook your pasta al dente along with the beets.
While pasta and beets are cooking, peel and chop garlic. Sauté on low with a glug of olive oil and a few splashes of vegetable broth to prevent sticking to the pan. Wash and slice pattypan squash into wedges. Add squash to the pan and cook until garlic and squash are browning nicely, adding broth and oil as needed. Strain pasta and beet and add to the pan with the squash and garlic. Toss pasta with fresh basil and serve!
