THAI-STYLE SEA BASS:
You asked for it…Make this and you’ve you got a simple quick go-to light meal for whenever you need one.
SERVES 2: Difficulty ⭐️
⏲️ PREP: 15 Minutes.
📌 Finely dice 2 shallots (eschallon), finely chop 1 red chilli and keep half separate, finely chop a handful of coriander. Season 2 sea bass fillets (if large cut them in half).
📌 In a small bowl make your dressing, juice 2 limes, add 2 tbsp light soy sauce, 2 tsp sesame oil & add half the red chilli. Mix well.
⏲️ COOK: 15 Minutes.
🐟 Heat 1 tbsp oil in a small frying pan and saute the shallots and half the red chilli on a low heat for 4-5 minutes until softened. Remove from the heat. Cook your rice (2 portions) and add the shallot, chilli and coriander, mix it through the rice and keep warm.
🐟 Heat 1 tbsp oil in a frying pan and over medium heat add the sea bass skin side down. Cook for 3-4 minutes, flip them over and repeat. Remove from the heat. Serve on top of the rice, drizzle your dressing over and enjoy 😉
