    Methie mango pickle

    Firstly its important to understand
    For your pickle to not spoil and to stay for a longer timeits important to follow the basics
    And be patient wen making the pickle

    Wash ur mangoes well..1 kg
    Cut up into pieces..desired size u want
    Generally it wud be quarters
    Remove the inside seeds
    Rinse again and dry well in colander
    Add to a dish
    Add rough salt and some tumeric and leave for a while..to release water
    Drain again
    Dry in the sun for a day or so ..or put by the fan
    Then continue step 2

    1 kg mangoes
    Add to a bottle or bucket
    Add 2 tsp rough salt
    Add 1 cup methie masala..or pickle masala
    3 cups oil ..heat up in a saucepan till hot
    Optional to add few whole garlic and curry leaves
    Allow to cool ..till luke warm
    Add over the mangoes
    Its important to cover all the mangoes well
    Otherwise ur pickle will spoil
    Close and keep in fridge or cool place
    The longer u keep it the more mature it will be
    The peel will soften and methie masala will swell and become thick
