Double Chocolate Delight Cookies with a Golden Crunch

    Ingredients
    1 cup soft butter
    1 cup white sugar
    1 cup brown or muscovado sugar
    2 tsp pure vanilla extract
    2 eggs
    3 cups all-purpose flour
    1 tsp baking soda
    1 tsp baking powder
    1 cup brown chocolate chips
    1 cup white chocolate chips (or chopped chocolate)

    Method
    1. Preheat oven to 180°C. Line a flat baking tray with baking paper.
    2. In a mixer with a whisk attachment, beat butter and sugars until combined.
    3. Add eggs and vanilla essence, and mix for about 1 minute.
    4. Add flour, baking soda, and baking powder. Mix until just combined.
    5. Stir in chocolate chips or chopped chocolate. Rest dough for 5 minutes.
    6. Scoop 1 tbsp dough, roll into balls, and place evenly spaced on tray.
    7. Bake for ±9 minutes, or until edges begin turning golden brown.
    8. Allow to cool on the tray before removing.

    ✨ Makes about 45 cookies.
    💡 Note: Cookies will crack and flatten as they cool.. this is normal.
