Spicy Mediterranean Cobia with Chickpea Delight

  • Spicy Cobia with Mediterranean vinaigrette and chickpeas!

    I am not usually super good at cooking fish so this recipe was perfect for me- super easy and the side dish could be prepped a day or two ahead. I used @sunbasket recipe!

    Ingredients:
    - 1 red onion
    - 1 can chickpeas
    - 1/4 lb grape tomatoes
    - 4 or 5 sprigs parsley
    - 3 oz baby spinach or other green
    - 2 fillets ( cobia, halibut, snapper)
    - 1 tsp chili flakes
    - @sunbasket Mediterranean lemon vinaigrette

    Recipe:
    1. Slice onion, halve tomatoes, rinse chickpeas. Sautée onions then add chickpeas tomatoes and 1/4 cup water salt and pepper. Cook until chickpeas are soft and tomatoes begin to break down. Remove from heat and stir in spinach, parsley, and more salt and pepper

    2. Pat fish dry with a paper towel. Fry in around 1 tbsp olive oil on medium heat until opaque and flaky on both sides.

    3. Serve chickpeas first on plate, then top with fish and vinaigrette. Enjoy!
