Savory Shrimp and Chive Gyoza Delight

    Gyoza:▪️1 lb. Peeled and Deveined Raw Shrimp, cut into small pieces then rough chopped▪️1 Garlic Clove, finely chopped▪️3/4 Cup Chopped Chinese Chives, also known as garlic chives (or 1/2 cup chopped scallions + 1/4 cup chopped regular chives)▪️2 Tbsp Finely Chopped Fresh Ginger▪️1 Tbsp Cornstarch▪️1/4 tsp Kosher Salt▪️1/4 tsp Pepper▪️1 Tbsp Sesame Oil▪️1 Tbsp Soy Sauce▪️1 Package Gyoza Skins▪️

    Sauce:▪️3 Tbsp Soy Sauce▪️2 Tbsp Rice Vinegar▪️2 Tbsp Sesame Oil▪️1/2 tsp Sugar▪️1 tsp Sesame Seeds▪️1 Tbsp Chili Oil Crisp or Chili Garlic Sauce, optional▪️1 Tbsp Sliced Scallions▪️

    For Cooking:▪️4 Tbsp Avocado Oil, divided▪️1 Cup Water, divided▪️

    1️⃣ Make the filling: In a medium bowl, add the shrimp, garlic, Chinese chives, ginger, cornstarch, salt, pepper, sesame oil, and soy sauce. Mix until all ingredients are evenly combined.
    2️⃣ Fold the gyoza: Fill a small bowl with water. Moisten the edge of a wrapper with your finger and place about 1 tsp filling in the center. Fold the wrapper in half, pinching to seal at the top. Starting from the midpoint, make two small pleats on each side, folding the edges toward the center and pressing firmly to secure. Repeat with the remaining filling.
    3️⃣ Make the sauce: In a small bowl, combine the soy sauce, rice vinegar, sesame oil, sugar, sesame seeds, scallions, and chili oil crisp (if using). Stir until the sugar dissolves.
    4️⃣ Cook the gyoza: Add 2 Tbsp oil to a cold large nonstick skillet with a lid. Add half the gyoza seam-side up, rubbing them lightly in the oil and leaving space between each. Add 1/2 cup water, cover, and place over medium heat. Cook until the water is absorbed, 7–9 mins. Uncover, reduce heat to medium low, and cook undisturbed until the bottoms are golden brown, 3–4 mins. Flip so the pleated side is down and cook 3–4 mins more until golden. Transfer to a plate and repeat with the remaining oil, water, and gyoza.
    5️⃣ Serve the gyoza hot with the dipping sauce on the side. Enjoy!
