Penne with Sun Dried Tomatoes, Olives & Capers (Pasta Puttanesca Style) 🍅⁣

Recipe:

Ingredients:

⁣2 cloves garlic, minced ⁣
⁣a drizzle of extra virgin olive oil⁣
⁣10g capers⁣
⁣15g sun dried tomatoes⁣
⁣10 or so olives, pitted ⁣
⁣75 grams tomatoes, chopped⁣
⁣80g your favourite tomato sauce⁣
⁣1 serving penne (85g)⁣
⁣chili flakes⁣
⁣salt + pepper⁣
⁣vegan parm⁣
⁣⁣
Instructions:

⁣Heat olive oil in a pan. Add garlic and fry for around 1 minute. ⁣
⁣⁣
⁣Add olives, capers, and chopped tomatoes. Add tomato sauce and season. ⁣
⁣⁣
⁣Cover and simmer on medium heat for around 10 minutes, stir often.⁣
⁣⁣
⁣Cook pasta in a pot of boiling, salted water until nearly al dente. ⁣
⁣⁣
⁣Drain and toss in pan with sauce and sun dried tomatoes. Cook for an additional minute. ⁣
⁣⁣
⁣Serve with chili flakes and vegan parm. ⁣
⁣⁣
